Hy, I am sending a high speed probe to Jool (1y100d of travel) and I am planning to use the stock inflatable aero shield to aerobrake on the orbit of the planet. Big question is the height that I aim to do that without exploding my ship or being dragged by the gas giant. The deorbit burn targeted one of the bigger landmasses of Eve, avoiding the large oceans, many of which appear to be huge meteorite craters.

Eve has an atmosphere which is even thicker and a gravity which is even higher than that on Kerbin. That means your craft needs an even stronger heat shield for atmospheric entry than it would need for Kerbin, and you don't seem to have any at all.
